Hess Su'skol Vineyard Late Harvest Chardonnay - 2006

A rare opportunity arose in 2006. Early harvest rains and cool, foggy mornings created perfect conditions for Botrytis to develop in our Su'skol vineyard. Botrytis, or "noble rot", punctures the grape skin, permitting water to escape from the berries and thuse concentrating the sugars and creating a distinct flavor to the wines. A "late" harvest - well after the normal picking of our Su'skol Chardonnay - was dedicated to collecting these extremely sweet grape clusters.
